Overview

Climate change is the elephant in the room for the 21st century. Recent innovations have given us new tools to turn the decades-old conversation on environmental concerns. We will explore how vegetarian lab-grown meat and food contamination diagnostics addresses the pertinent problems in global food sustainability. Gain insights on how advances in machine learning will redefine power management towards efficient and renewable energy sources.

From Bench to Butcher: Lab-grown Pork Belly by Ong Shujian & Nichole Tan Yue Ting, Undergraduates, National University of Singapore

Pork is the most consumed meat in the world. In Asia, demand has risen in recent years and is not expected to slow down any time soon. Among the different cuts of pork, pork belly is especially popular in Asia, ranging from the Chinese Hong Shao Rou, to the Japanese Chashu and Korean barbecue. However, present methods of meat production are unsustainable. Intensive farming of pigs is unethical and poses environmental and health problems. How can we secure our meat supply for the next generation?

In this talk, we will be presenting on a more sustainable approach to produce meat, leveraging on scientific research and development. We will be sharing our motivation, current progress and future goals.
